Strawberry Chia Yogurt Parfait

Yogurt Ingredients:
3 cups plain yogurt
4 tbsp chia seeds
4 tbsp honey
4 scoops collagen (~80 g) (or protein powder)
1 tsp vanilla extract
2 cups frozen strawberries
Granola Ingredients:
1 ½ cups oats
2 cups pea protein crisps
1 tbsp ground cinnamon
½ tsp salt
1/3 cup avocado or coconut oil
3 large egg whites
1/3 cup honey
Recipe:
In a large bowl, combine the yogurt, chia seeds, maple syrup, collagen, and vanilla extract; stir well till all is combined
In a small pot, defrost the strawberries and let the juice boil off for about 10 minutes till a jam-like consistency is formed
Combine the strawberries with the yogurt mixture and stir well, then distribute into 4 separate containers to store for later or serve with granola topping as well as any desired fruit
To make the granola, start by preheating the oven to 225 degrees Fahrenheit, then combine the oats, pea protein crisps, cinnamon, and salt
In a separate bowl, melt the coconut oil (or, when using avocado oil), pour over the dry ingredients, and mix well
Add the honey and mix again
In a smaller, medium-sized bowl, separate the egg whites and beat until stiff peaks form
Gently fold the egg whites into the rest of the granola mixture
Spread the granola out evenly onto a baking sheet covered with parchment paper and bake for 1 hour and 10 minutes; keep an eye on it after an hour
Allow it to fully cool and store in an airtight container or serve right away on top of the yogurt
