Loaded Breakfast Bowl

Servings: 4-6

Description: This bowl is a great way to start your day strong, with about 30-40 grams of protein and healthy carbs from the sweet potatoes. It can be easily meal-prepped and enjoyed as breakfast, lunch, or dinner.

Ingredients:

  • 2 tbsp butter or avocado oil

  • 4 sweet potatoes 

  • 1 onion diced

  • 2 tsp salt

  • ½ tsp pepper

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 16 oz ground beef

  • 8 eggs

  • 2 avocados

Recipe:

  1. Dice the onion and sweet potato. 

  2. In a large pan, add the butter, onion, and sweet potato.

  3. Cook until potatoes are soft and the onions are browned.

  4. Add the ground beef to the pan along with all the spices (salt, pepper, garlic powder, and smoked paprika).

  5. Once the beef is fully cooked, push the beef and potato mixture to one side of the pan, and in a bowl, whisk together the eggs and add to the other half of the pan.

  6. Stir the eggs, and once they are nearly fully cooked, mix them into the beef and sweet potatoes. 

  7. The avocados can either be used as a topping along with any other toppings (ketchup, hot sauce, etc.), or you can mix the avocado into the beef, potato, and egg mixture
