Chicken Casserole

Servings: 4-6

Description: Great meal prep recipe, easy to reheat and take on the go.

Ingredients:

  • 2 chicken breasts

  • 2 cups cottage cheese

  • 1 large or 2 small heads of broccoli

  • 4 tbsp butter or avocado oil

  • 1 ½ cups shredded gruyere cheese or mozzarella 

  • ½ cup flour

  • 4 large eggs

  • 1 tsp salt

Recipe:

  1. Preheat oven to 350 degrees F and grease a casserole dish with butter or avocado oil

  2. Prep chicken by rinsing, drying with paper towels, and then cutting into bite-sized cubes.

  3. On a separate cutting board, prep the broccoli by rinsing and then cutting into small bite-sized pieces (use all parts of the broccoli).

  4. Shred the cheese.

  5. In a large bowl, combine all the ingredients and pour into the casserole dish.

  6. Bake uncovered for 40-45 minutes until edges are golden brown, and the center is set

  7. Cool in the pan for 5-10 minutes and slice into 4-6 portions to serve
