Chicken Casserole
Servings: 4-6
Description: Great meal prep recipe, easy to reheat and take on the go.
Ingredients:
2 chicken breasts
2 cups cottage cheese
1 large or 2 small heads of broccoli
4 tbsp butter or avocado oil
1 ½ cups shredded gruyere cheese or mozzarella
½ cup flour
4 large eggs
1 tsp salt
Recipe:
Preheat oven to 350 degrees F and grease a casserole dish with butter or avocado oil
Prep chicken by rinsing, drying with paper towels, and then cutting into bite-sized cubes.
On a separate cutting board, prep the broccoli by rinsing and then cutting into small bite-sized pieces (use all parts of the broccoli).
Shred the cheese.
In a large bowl, combine all the ingredients and pour into the casserole dish.
Bake uncovered for 40-45 minutes until edges are golden brown, and the center is set
Cool in the pan for 5-10 minutes and slice into 4-6 portions to serve
