Buckwheat Pancakes

Description: Protein-filled breakfast that can be customized to be sweet or savory, I lean toward the sweet side of things :)

Ingredients:

  • 2 eggs

  • ½ cup plain yogurt

  • ½ tsp vanilla extract

  • 1/3 cup buckwheat flour

  • 2 tbsp collagen

  • ¼ tsp baking soda

  • butter for cooking

  • Topping: Frozen berries (thawed), peanut butter, and honey

  • Other topping options (sweet and savory): Butter, syrup, bananas, cinnamon, ham, cheese, etc.

Recipe:

  1. In a medium-sized bowl, break the two eggs, add the yogurt and the vanilla extract, and mix until all are combined.

  2. Add the rest of the ingredients and stir until a smooth batter has formed

  3. Heat a skillet on high heat and add a layer of butter to the pan, then turn the heat to medium when adding the pancake batter

  4. Cook each pancake for about 2 minutes on each side, checking every so often to make sure they are not burning

  5. Serve with any toppings of choice
