Buckwheat Pancakes

Description: Protein-filled breakfast that can be customized to be sweet or savory, I lean toward the sweet side of things :)
Ingredients:
2 eggs
½ cup plain yogurt
½ tsp vanilla extract
1/3 cup buckwheat flour
2 tbsp collagen
¼ tsp baking soda
butter for cooking
Topping: Frozen berries (thawed), peanut butter, and honey
Other topping options (sweet and savory): Butter, syrup, bananas, cinnamon, ham, cheese, etc.
Recipe:
In a medium-sized bowl, break the two eggs, add the yogurt and the vanilla extract, and mix until all are combined.
Add the rest of the ingredients and stir until a smooth batter has formed
Heat a skillet on high heat and add a layer of butter to the pan, then turn the heat to medium when adding the pancake batter
Cook each pancake for about 2 minutes on each side, checking every so often to make sure they are not burning
Serve with any toppings of choice
