Bean Tacos

Description: Warm and hearty meal with an added tang from the cilantro-lime dip. So flavorful and easily one of my favorite meal prep recipes.
Ingredients:
Tortillas:
- 4 cups flour
- 2 tsp salt
- 1 1/3 cups water (warm)
- 1/2 cup oil of choice (avocado oil, butter, etc)
Bean filling:
- 3 cups cooked black beans (rinsed and from a can or cooked at home)
- 2 whole tomatoes
- 1 baked sweet potato
- 3 cloves garlic
- 3 tsp smoked paprika
- 3 tsp salt
- 1 tsp pepper
Cilantro lime dip:
- 1 cup yogurt
- 1 avocado
- 4 tbsp olive oil
- 2 cups cilantro
- juice of two limes
- 1 tsp salt
Recipe:
Tortillas:
In a large bowl, combine the warm water and salt
Once the salt has dissolved, add the flour and oil to the bowl and stir well till the dough comes together (add more water if it is too dry)
Transfer the dough to a clean and floured work surface and knead the dough until smooth (2-3 minutes)
Cover the dough with a clean dish towel and let the dough rest for about 30 minutes to 2 hours.
Divide the dough into 8 large pieces to roll into tortillas or 16 small pieces
Heat a skillet on high heat, and roll out the first tortilla till it is as thin as it can be
Place the tortilla in the skillet and let it cook on each side for about 30 seconds, or until both sides of the tortilla are browned
While one tortilla cooks, roll out another so that it’s ready to be cooked
For the tortillas that are done, place them on a clean dishcloth and cover to keep warm
Bean Filling:
If using beans from a can, strain the beans and rinse them off, then put the beans into a food processor along with the rinsed tomatoes and baked sweet potato
Peel the garlic and add it to the food processor
Pulse the mixture till all of the food is combined and broken down
Add in the rest of the ingredients (paprika, salt, and pepper) and pulse for another 20 seconds
Cilantro Lime Dip:
In a clean food processor or a blender, combine all the ingredients and blend until smooth
Transfer to a clean jar or storage container
Putting it all together:
Take a tortilla and fill half of it with the bean filling (evenly) so that it can be folded in half like a taco/quesadilla
It can either be cooked on a preheated skillet right away, or it can be stored in an airtight container to be heated up later
Serve alongside the Cilantro Lime Dip
