Beef Bowl

Description: This is the ultimate summer dinner, with warming flavors from the beef and sweet potatoes, while the kale provides that fresh touch.

Ingredients:
- 1 bunch of kale
- 28 oz (2 packs)
ground beef
- 4 sweet potatoes
- 1 tsp (each spice) dried basil, oregano, rosemary, and parsley
- 4 tbsp avocado oil
- salt and pepper to taste

Recipe:
1. Prep the sweet potatoes, rinse, and dice into bite-sized cubes. Place the diced potatoes in a large bowl and marinate with 3 tbsp of the avocado oil and the spices, including salt and pepper.
2. Prep the kale, rinse, and chop into thin strips. Set aside in another large bowl, and massage the remaining 1 tbsp of avocado oil into the kale
3. Heat a large pan on high heat and add the ground beef
4. Break up the beef into small pieces and let it cook until no longer pink; make sure to stir occasionally.
5. Add the marinated sweet potatoes to the beef and let them cook until soft. Add salt and pepper, starting with 1 tsp of salt and adding pepper to the desired taste.
6. Serve with a base of kale and top with the sweet potato and beef (add any desired sauce or salad dressings - optional).
